The ground flour flowing down the chutes were bagged at 50 kilos in the past. Currently, they are filled at 25 kilos. There are two wheels, an undershot wheel (where the velocity of the flow of the brook is used to turn the wheel) and an overshot wheel (where the water gains sufficient head and then cascades over the brim of the weir on to the water wheel).
