70% of Singapore's supply comes in here. Thronged by wet market hawkers and restaurant owners, the wholesale centre is operational 24 hours a day and pretty much all through the year. A lot of the trading is done at night, starting 7pm. But the busiest window is from 2am to 4am.

Ayush Basu: And not only 24 hours, pretty much 363/4 days in a year, Elizabeth! Well it being food and all. Singapore does not have much of land that can be dedicated to feeding a population of 5+ million.

Very green and very fresh, whatever they are
Ayush Basu: Thank you very much, Chris. Green they are, fresh too in the sense that they were probably harvested 72 hours ago and spent some time in a warehouse, followed by a refrigerated truck ride.

We have our traditional markets, too; all were in the East End of London but have gradually moved out further from the centre; again, nighttime is the busiest. I like your focus here.
Ayush Basu: I can imagine, Alan. I have seen markets in India, Thailand and the Philippines; despite the many differences, the basic premise is still the same. I am pleased you liked the choice of focus.
I guess the trading takes place overnight so the shopkeepers have it all fresh in their shops at morning opening time.
Ayush Basu: I am told, in between, there will be visits by the authorities for random sampling and testing, pending which, nothing can be sold. But yes, you're right. Keeping in mind the perishable quality of the articles, the testing is done right here in these facilities.
